LOL - rule of 1900. You really need to go with the rule of 1800!!! Modified corn starch is a score of products. Sorry but many forms of modified starch existed as home products BEFORE 1900. The early 1800s was the heyday for experiments to improve canned food products. Example: 1831 Hydrolyzed vegetable proteins for that meat boullion taste and commercial products by 1886. (But note that the common hydrochloric acid treatment is the same as stomach acid without the personal touch.)
